All these Chinese delicacies have been meticulously prepared by Chef Mathura Paswan from Jharkhand having worked at the prestigious “Chinapolis”-Taj Vivanta, Trivandrum, with more than 25 years of culinary experience in India and Gulf countries. He is also joined by Taj Gateway, Mangaluru Executive chef Sinu Vijayawan in preparing some of the best Chinese cuisine that the Mangalurean food lovers will cherish for a long long time. Speaking to Mangalorean.com, Chef Paswan said, “The spices used are mainly sesame seeds, soya, bean paste, garlic, ginger and red chillies. Chinese cuisine is widely seen as representing one of the richest and most diverse culinary heritages in the world. A meal in Chinese culture is typically seen as consisting of two general components: (1) a carbohydrate source or starch, known as 主食 in the Chinese language (Pinyin: zhǔshí; lit. “main food”, staple)- typically rice, noodles, or mantou (steamed buns), and (2) accompanying dishes of vegetables, fish, meat, or other items, known as 菜 (Pinyin: cài; lit. “vegetable”) in the Chinese language. We have tried our best to offer our customers the best Chinese delicacies we could offer”
The buffet menu includes : Chicken suimai (open minced chicken dimsum) and for Veg Dimsum-Mushroom and corn Dimsum (minced corn kernels and fresh mushroom). For veg starters there is :Shangai style crispy chestnut and tofu; Crispy fried golden corn kernels chilli pepper; Dragon vegetables with cashewnut; Crispy lotus stem honey chilli. and for no-Vegetarian Starters : Batter fried squid rings; Crispy sesame chilli scallion tossed prawns; Crispy chilli oyster fish; Chong qing chicken; Konjee crispy lamb (Shredded crispy fried tender lamb tossed in a tangy sauce with peppers and onions)
Vegetarian Soups included are- Golden garlic lemon clear vegetable soup and Hot and sour vegetable soup, while Non Vegetarian Soups are garlic lemon clear chicken soup; Hot and sour chicken soup, and Lung fung kang with prawn and chicken. For main course, veg menu is- Lohan tofu with chinese cabbage, pakchoy and assorted mushrooms; Hot pot vegetables with tofu; hot pot stewed vegetables in a aromatic spicy chilli sauce; Stir fried butter garlic Chinese greens; and Baby corn ,baby potato and broccoli in devil chilli sauce.
For non-veg there is : Diced chicken black pepper sauce; Shandong chilli chicken; Sliced chicken and spinach with black bean and fresh red chilli; Lamb, & tenderloin- Beijing lamb hot pot; Tenderloin with black pepper and Minced tenderloin and mushrooms in chilli oyster sauce with crushed peanuts. For Fish and seafood delicacies, try Crunchy prawns with rice wine and sweet peppers; Quick fried sizzling spicy squid with sesame; Pickled chilli and ginger flavored steamed fish on garlic greens; Crispy fish in yellow corn and chilli sauce . While craving for rice items, the menu includes Vegetable fried rice; Burnt garlic fried rice with corn ; mushroom and Steamed rice; and Wok fried rice canton style with chicken/mixed meat/egg
If you like noodles, the spread includes Vegetable soya and sprouts hakka noodles; Wok tossed cumin scented flat noodles with vegetables; Chicken hakka noodles andSichuan flat noodles with chicken. The meal is incomplete with delicious desserts- the Desserts featured at this Food Fest are- Date pancake, Lychees with ice cream and HoneyDarsan. Overall, this food fest will be a very interesting experience. Chinese food has subtle flavours and uses a lot of fermented ingredients, and some of the sauces and dips are fiery.
Chef Paswan has researched a lot to ensure that the best dishes of the Chinese cuisine has been showcased at the festival. He has meticulously prepared the dishes under the supervision of Executive Chef Sinu Vijayan of Hotel Taj Gateway-Mangaluru to bring out the best of the Chinese Cuisine featured in the Fest..
