Mangaluru: Khandeshi cuisine from North West Maharashtra is as much about kala masala as that unmistakable layer of floating oil. If you ever had a Khandeshi Maharashtrian for a friend, it’s possible that their mother would have you take the ultimate spice test -stomaching the thecha. The Khandeshis like their meals spicy and earthy. Shengdana Tel, Dry Coconut (khopra) and dark, tiny lavangi mirchi are the hallmark of their cooking. But the foolproof way to tell a Khandeshi dish from another is to look for oil swimming over the dish, locally and lovingly called tarri. Yes, the great saga of Kala Masala and Tarri!
Wholesome and spicy, Khandeshi food is a hidden culinary gem. Home to the oh-so-delicious Kala Masala, many regions of Maharashtra have a distinct cooking style, influenced by local produce and the farmers’ lifestyle. Cardamom – The specialty restaurant at the Gateway Hotel Old Port Road, Mangalore brings to you the culinary jewels from the land of the Marathas, the worth of which are measured by the significant flavors of the region – red chillies, coriander seeds, cumin seeds, clove pods and kokum.
Maharashtra is a huge state and each region of this state has a culinary delight and a complete contrast of flavors from the low level of spices to highly spiced and hot food. Master Chef Vidyadhar Jadhav, who is a Maharastrian food specialist has been flown down from The Gateway Hotel Nashik to delight the Mangalorean guests with the authentic taste of the food which has been chosen from the regions, Marathwada, Kholapur, Konkan and vidhrba for this unique Maharashtrian food festival which started from 14 August and will go up to 23 August at Hotel Taj Gateway cardamom restaurant.
Some of the interesting dishes in the menu fare komdi cha rassa, Khandeshi mutton, bharali vangi, akkha masoor and Doodh Bhoplyacha Halwa. You begin with a Welcome Drink Taak, followed by Soups namely Tomato cha saar (lightly spiced tomato and coriander and coconut broth) and Mutton cha saar (Lamb broth delicately flavored with Indian spices). The Main course comprises of Komdi cha rassa (chicken cooked in homemade spices), Mutton Khandesi (Succulent lamb cooked with special Khandesi masala) and Malwani fish.
