Acorn Squash Coronet

Make a zigzag cut in the upper half of the Squash cutting around and deeper into the center. At the end give it a gentle twist and you should be able to separate the halves. Take out the seeds and the stringy pulp.  Use the bottom half as a small fruit bowl or as a bowl for Salad Dip and the upper half can be used for simply for decoration by leaning against the bottom half or anything else that you consider attractive. I have placed a cut Capsicum in the center. A Pumpkin can be substituted instead of Squash for carving with equally good result.
 
While not as rich in beta-carotene as other winter squashes, acorn squash is an outstanding source of dietary fiber and supplies some vitamin C, B vitamins, and a substantial amount of potassium, along with some magnesium and manganese. With its deeply-ridged, golden brown to orange shell and yellow-orange flesh, acorn squash makes a handsome vegetable not only for presentation but also when baked. Either way….enjoy!
