This is why, possibly, the influence of the Mughals is mostly experienced in their foodstuff. Several of India’s royal non-vegeterian dishes have come from the kitchen of the Mughals. Apart from initiate the tandoor (earthen oven), used to make rotis and kababs – which are pieces of meat marinated in spices and skewered over a coal tandoor. Some of the well-known Mughlai dishes include tandoori chicken, seekh and boti kabab and even tandoori fish.

The “Mughlai Food festival” buffet spread consists of : Soup- Murg Jafrani shorba (Spicy chicken broth flavored with saffron), Subz bahar shorba (Garden fresh vegetable broth); Varieties of Salads like-Achari Sabzi salad, Beetroot and yoghurt salad, Chana papadi chaat, Ankoori salad, Spicy chicken sald, Anda Chaat etc;
Starters include- Anjeer Kebab (prepared live)-raw banana tikki stuffed with anjeer and grilled on tava; Murgh Mirza Hasoon -Chicken marinated in Chef’s own spices and char-grilled in tandoor;
Non-veg main course include Mughlai murgh biryani (A flavorful preparation of chicken and rice), Mughlai Mutton Stew (Spicy mutton delicacy/curry), Machali joshina (Fish simmered in tangy rich gravy). Vegetarian items include- Paneer lazzatdaar, Gobi mussalam (A tangy baked cauliflower), Baingan ka salan (baby brinjals cooked in tangy gravy), Subz miloni (Asst.vegetables cooked in rich onion gravy),Kumb mutter makkai korma (Mushrooms cooked with green peas and corn), Subz biryani (Rice cooked with vegetables cooked in dum style, Steam rice, Dal sultani, Paratha / sheermal / warqi paratha
