Mangaluru: Mughlai cuisine- derived from the rich, aromatic and delectable food prepared in the royal kitchens of rulers during the Mughal period- takes one back to another era when preparing food was a treasured art and each meal with fit for a king! A judicious addition of spices, gentle cooking, the addition of nuts goes towards creating the most delicious kebabs, curries and biryanis in Mughlai Cuisine. Agra is synonymous with Mughlai and Frontier cuisines, a legacy of the Muslim dynasties that once ruled here. This cuisine is quite spicy, with a unique aroma and often milk or cream based. Delicacies include biriyanis, pasandas, kormas, pulao, kababs, tikkas and hot and spicy shorba (soup). Pedas and Pethas are the favourite sweet dishes of the city.

As the story goes behind Mughlai cuisine, the Mughal rulers were the great builders, in same keenness the Mughals were also known as great food connoisseurs. Almost every Mughal ruler has passed on his personal formula as he moved along the passage of time, which is known as Mughlai food. This is why, possibly, the influence of the Mughals is mostly experienced in their foodstuff. Several of India’s royal non-vegeterian dishes have come from the kitchen of the Mughals. Apart from initiate the tandoor (earthen oven), used to make rotis and kababs – which are pieces of meat marinated in spices and skewered over a coal tandoor. Some of the well-known Mughlai dishes include tandoori chicken, seekh and boti kabab and even tandoori fish.

Master Chef Santhosh Kumar Yadav, who has been over 20 years with Hotel Taj Gateway-Agra has prepared authentic Mughlai and North India dishes for many VIPs during their stay at the hotel-to name a few, for PM Narendra Modi during a convention at Umid Taj Gateway-Ahmedabad, for Varun Gandhi’s Marriage party at Taj-Banares, and for many international and national leaders. His cooking has got praises from connoisseurs from all walks of life. Santhosh has also worked at various Taj hotels in India namely, The Delhi Tajmahal Hotel, and at Taj Gateways hotels in Ernakulam, Madurai etc.

The “Mughlai Food festival” buffet spread consists of : Soup- Murg Jafrani shorba (Spicy chicken broth flavored with saffron), Subz bahar shorba (Garden fresh vegetable broth); Varieties of Salads like-Achari Sabzi salad, Beetroot and yoghurt salad, Chana papadi chaat, Ankoori salad, Spicy chicken sald, Anda Chaat etc;

Starters include- Anjeer Kebab (prepared live)-raw banana tikki stuffed with anjeer and grilled on tava; Murgh Mirza Hasoon -Chicken marinated in Chef’s own spices and char-grilled in tandoor;

Non-veg main course include Mughlai murgh biryani (A flavorful preparation of chicken and rice), Mughlai Mutton Stew (Spicy mutton delicacy/curry), Machali joshina (Fish simmered in tangy rich gravy). So go hungry and savour the wide array of Mughlai dishes this unique food fest has to offer. “Had gone to this restaurant specially to taste the mughlai speciality and I must say this restaurant stood up to my expectations, be it food, ambience, service or quantity of serving, everything was great. Though a bit expensive as it is a star hotel, but a worth trying if you want authentic mughlai cuisine. Food lovers should go and try the authentic Mughlai cuisine at this food fest. I may go back again, if I am still in town” said Rakesh P, who is on a business trip to the city.

Display is not that attractive. Food may be tasty but presentation is very important in a set up like this.
