Some of the fiery dips which accompany the food may also please the food lovers, all meticulously prepared by Chef Raj Kishore Sahoo. Chef Raj Kishore Sahoo came from humble beginnings. He was raised in a small city of Cuttack Orissa. He Graduated from Malan oriental catering College of Calcutta in 2010. He then started working with the Radisson Blu Hotel in Indore for a year where he helped to assemble dishes and work as a part of team to keep up with the orders coming into the kitchen.
Chef Raj Kumar Sahoo Excelled in the Art of Chinese Cuisine when he joined the Sian restaurant at Taj Vivanta Chennai, where he had special influence on the menu, which includes Traditional Chinese ,Thai and Japanese food. The skills gained at the Sian restaurant allowed him to gain importance among the well-known chefs among the Taj . He has conducted numerous Food festivals among the Taj group of Hotels within a short span of time. In his spare time, Raj enjoys an active life which drives his demand for nutritious food. Every meal that he creates reflects these values providing not only excellent taste but also nourishment for the mind and the body.
Speaking to Mangalorean.com, Chef Sahoo explained in detail about the Pan Asian cuisine saying, ” Pan Asian cuisine is extremely simple and flavorful, where lots of vegetables – both fresh and fermented are used in many items. Cabbage, yellow beans and radish are some of the popular vegetables. Among meat, Pork is the most popular (though this festival does not showcase pork dishes) followed by beef (Beef also is not featured in this Food fest).The spices used are mainly sesame seeds, soya, bean paste, garlic, ginger and red chillies. Food buffs need to taste the Pan Asian cuisine to experience the food”
The menu features a vast array of starters and main courses. Kimchi a highlight of Korean cuisine is also served on request. To name a few items found in the menu during this Fest are- Mountain Chilli Chicken, Drums of heaven in Shang Dong Style, Crunchu lotus stems with Schezwan chilli, Sliced Chicken in tobanjan sauce, Honey Chicken, Lamb in cumin and leek, wok-tossed tenderloin with greens and garlic, Prawn Har Gow/Chicken Ching Kow (Dim Sum), mud crab in Singapore Style, Lobster in chilli oyster sauce, and for desserts- Honer daarsan with sesame seeds, Date pancake with Ice Cream, Toffee banana, plus varieties of noodles and fried rice. Feeling little thirsty, you can sip on the special cocktails like China Blue and Blood Orange, or Mocktails like- Dragon Delight and Half Moon.
Overall, this food fest will be a very interesting experience. Pan Asian food has subtle flavours and uses a lot of fermented ingredients, and some of the sauces and dips are fiery. Chef Sahoo along with Taj Gateway Hotel-Mangaluru Executive Chef Sinu Vijayan, and other in house assistant chefs have researched a lot to ensure that the best dishes of the cuisine has been showcased at the festival, in order to bring out the best of the Pan Asian Cuisine.
