Mangaluru: Yes, Mangaluru’s prestigious and 4-Star Hotel Taj Gateway-Bunder road-Mangaluru is back again with yet another “Food Festival”, and this time it’s going to be “Hot and Spicy”- and you gonna love it! This food festival is organized to celebrate the most prized cuisines of the Telangana state much to the delight of the foodies. Held at The Cardamom Restaurant inside the Taj, the Ten-day festival boasts an array of lip-smacking cuisines raising from snacks to main course items.

On the First day itself, Friday 25 Aug, denizens thronged the festival to give their taste buds something to cheer, even though most of them were not from the Telangana state, but it was an opportunity for them to taste the diversity of Telangana cuisines under one roof. Telangana is known for its distinctive cuisine that includes a wide variety of sweet and savoury dishes. Being a semi-arid state, the staple food in Telangana is not rice but millet. As a result, a variety of Millet’s are consumed as is or used to make wholesome and rustic breads that are enjoyed with spicy accompaniments.

So why make any hesitations, if you like spicy cuisine- come to the Telangana Food Fest and taste the finest and the scintillating cuisine of Telangana in all its ancient glory with exotic spices and flavors with special Master Chef Nagendra Poojary, flown all the way from Hyderabad, who is all set to create some very special mouth-watering delicacies that will be showcased at the Food Fest. Here is a peek into the mouthwatering delicacies that Telangana Food Fest has to offer: In the Non-Veg snacks- Royyala Vepudu (Crispy deep fried prawns); Kodi Roast (Fried chicken with Andhra spices); Mamsam Vada (Kheema vada deep fried); Rawa Chappa (Deep fried semolina crumbed fish); And in Veg Snacks-Gobi Miriyalu (Crispy cauliflower flavoured with pepper); Parippu Vada (Dal Vada deep fried); Methi Bonda (Aloo vada); Ullipaie Pakodi (Crispy loose onion pakoda)

In soup, Kodi Charu (Authentic hot Andhra thin chicken soup); Lemon Miriyala Mamsam Charu (Black pepper, lemon mutton soup); Kothmir Pappu Rasam (Lentil soup Andhra style); Tomato Rasam (Tomato soup Andhra style). In main course :Mirapakaya Kodi (Chicken cooked with green chilly and coconut); Telangana Kodi Kura (Spicy Telangana chicken); Nellore Chepala Pulusu (Tangy Andhra Style Telugu Fish curry in tamarind Sauce); Royyala Iguru Andhra Style (Simple fresh prawn curry preparation in sauteed onions and Indian spices): Munakkaya Mamsam (Meat lovers will relish this mutton curry which is cooked in combination with drumsticks); Gongura Mamsam (Spicy lamb curry with the distinctive taste of it with main ingredient being gongura or sorrel leaves)

In Main Course Vegetarian : Gutti Vankaya (Andhra popular stuffed brinjal curry); Bangala-dumpala Vepudu (Andhra style potato fry); Potlakaya Senagapappu Kura (Snake Gourd Chana Dal Curry); Bendakaya Phali Fry (Simple and homely recipe of bhindi (Ladies Finger/Okra )fry made Andhra style); Beerakaya Kura Andhra style (Andhra Style Ridge Gourd Curry); Kakarakaya Pulusu (Bitter gourd curry prepared with tamarind and spices); Sorakaya Masala Curry (Bottle Gourd Masala curry, an Andhra Dish which almost tastes like non-veg because of the spices used in it); Chamagadda Pulusu (A traditional dish of Andhra Pradesh where the (taro root) is cooked in a tamarind sauce, jaggery and spices);

Gummadikaya Pulusu (Andhra pumpkin stew. Telangana people love variety of pulusu for their simple meal and this one is so easy to make); Dondakaya Vedupu (Ivy gourd is known as Dondakaya in Andhra, finely sliced deep fried and tempered with seasoning); Thotakura Pappu (this recipe uses green leafy vegetable amaranth leaves, named Thotakura); Tomato Pappu (This tomato dal is inspired from the Andhra cuisine known for its bold and spicy flavors); Dosakaya Pappu (Andhra style yellow cucumber dal to be serve with rice or chapathi); Mamidikaya Pappu (Delicious tangy dal made with raw mango) ; White Rice/Steamed Rice; Pulihora (Andhra pulihora or tamarind rice called as chintapandu pulihora); Kobbari Annam (Coconut milk rice or coconut rice from coastal Andhra region); Kothmir Annam (Fresh coriander flavored rice)

And those with sweet-tooth go in for the delicious Desserts like: Putharekulu (Sugar Paper Sweets popular Indian sweet from Atreyapuram, East Godavari); Kakinada Kaja (Kaja is a traditional Andhra sweet dish and it famous in Kakinada, prepared with Maida and sugar): Bobbatlu (A classic sweet stuffed flat bread); Ariselu (Ariselu or Arisa is an Indian sweet from Andhra Pradesh made using Jaggery, Ghee, Rice flour); Pappu Payasam ( (Traditional Indian dessert is pappu payasam prepared from good quality yellow moong dal, jaggery and coconut milk); Semiya Payasam (A classic Indian dessert prepared with roasted vermicelli, milk and nuts. Very creamy and Yummy!). And to bring to the fore a Telangana heritage dining experience, the food Fest while offering a delectable array of traditional Telangana dishes is also accompanied with soothing renditions of classical music creating an unmatched experience where you are served exotic fare rooted in tradition and nostalgia.
